The GEA CutMaster DUO is a bowl cutter, designed to give you extra cutting power for speedy processing. A second knife head with specially developed raw sausage knives in the same industrial bowl cutter means you can expect fast mixing and cutting of your raw sausage recipes, for significantly short batch times.

You told us it would be great to have equipment that can reduce processing times without compromise on product quality. In answer, our experts developed the GEA CutMaster DUO as a powerful, efficient bowl cutting machine that can significantly shorten processing times of the production of high-quality salami and other raw sausage products. Equipped with 2 independently adjustable TopCut VSH (Versatile – Safe - Hygienic) knife heads, and a 500-liter bowl, the GEA CutMaster DUO can process a 250 kg batch of deep-frozen, frozen or fresh meat or bacon in less than 2 minutes. This impressive performance is matched with the necessary hygienic design, to deliver clear-cut, uniformly grained fermented sausage products.

The unique TopCut VSH (Versatile – Safe - Hygienic) knife system is designed to virtually eliminate vibration, and enable cutting speeds of up to 162 m/s. The new knife head also augments product  flow to reduce batch times. 

Versatile: A single set of knife discs and components is used for all possible knife head configurations. This means that you don’t need to change the number of knife discs when switching from one to two tracks, or vice versa. And with the option of different knife types for various cutting applications, the TopCut VSK Knife system is a true multi-tasker.
Safe:Fewer knife discs can also mean better operational safety, as there's less weight on the shaft, which reduces the rotational mass. The knife discs are clearly marked to avoid incorrect installation, which is a further aid to safety, and the knives are all interchangeable.
Hygienic:The knife holder is integrated into the knife disc of the GEA TopCut VSH, which makes thorough cleaning easier, and further reduces the possibility of incorrect assembly.

Optimal cutting area

The combination of a geometrical bowl design and large inlet area makes it possible to achieve a filling level of up to 95%, so you can maximize production during each batch. The large inlet area also means faster product infeed into the cutting area, and accommodates bigger product pieces. The  360° cutting area also helps to achieve optimum emulsification results. By using the so called 'buffle plate', the cutting area can be set up from wide to small to influence the throughput and determine the degree of fineness.

Using our buffering and belt transport equipment to distribute the emulsion or premix means the product can be transported to the next stage in the process by simply pressing a button. Our transport systems also eliminate the need for manual handling and for storing trolleys in the preparation area, which saves on time and space, and helps to reduce delays.
