Salt brine is used to cure many different varieties of cheese. Its microbiological composition is as important as its salt concentration in cheese making. Since disposal of salt brine is very expensive and often prohibited due to the high salt content, it is preferred to be recovered and reused, which makes brine cold sanitation one of the best quality improvements in cheese factories.

Condensate from evaporation plants is used as boiler feed water, process, cooling, and rinsing water or is directly discharged into a drainage ditch. For this purpose, the condensate must be purified. Impurities in the condensate can be removed by membrane filtration, in the particular case by reverse osmosis, and high condensate qualities can be achieved.

As a basic substance for so-called FAB (flavored alcoholic beverages), a discolored and purified water-alcohol mixture is used. The basic material is beer (fermented alcohol bases). Undesirable ingredients, such as sugar, salts and long-chain color and aroma components are separated by cross-flow filtration.
