La ecuación del agua
En toda Europa, la sequía es una realidad recurrente que ya no se limita al sur. Si bien el agua influye cada vez más en dónde eligen ubicarse las industrias, su valor viene determinado por el contexto local. Existen numerosas vías tecnológicas para lograr la eficiencia hídrica en los procesos industriales, pero la ubicación, las necesidades energéticas y otros factores también son fundamentales.
Por lo general, las bebidas funcionales se fabrican a base de productos vegetales o frutas que llevan añadido un ingrediente orientado a conseguir una función específica e importante para la salud.
En su elaboración se utilizan distintos tipos de ingredientes, por ejemplo, aminoácidos, vitaminas, sales minerales, moléculas antioxidantes, fibra, microorganismos probióticos y factores prebióticos (fibra disoluble).
Las bebidas funcionales se enfrentan a una gran demanda, ya que los consumidores buscan productos sanos y naturales sin tener que recurrir a dietas alimenticias que, en la mayor parte de los casos, suelen estar asociadas con alimentos insípidos y con un aspecto poco estimulante.
Las bebidas deportivas están diseñadas para actuar como un suplemento que reponga el agua, los electrolitos y la energía gastadas con el ejercicio. Su gama de productos es muy variada y comprende desde soluciones nutricionales complejas para deportistas profesionales a productos isotónicos destinados al consumidor ocasional. Tales productos están ampliamente representados en las grandes cadenas de distribución minorista.
Este tipo de bebidas ofrece diferencias funcionales; por ejemplo:
Isotónicas: tienen la misma concentración salina que los fluidos corporales, por lo tanto, permiten reponer rápidamente los líquidos y los minerales que se pierden con el sudor, y proporcionan energía gracias a su contenido en carbohidratos;
Hipotónicas: contienen moléculas en concentraciones menores si se comparan con las que se encuentran en la sangre; su acción de reposición es más rápida que con las isotónicas, pero no tan beneficiosas como los carbohidratos.
Hipertónicas: (con más moléculas en comparación con la sangre) se utilizan normalmente para la ingesta de carbohidratos tras el ejercicio físico a fin de reponer las reservas de glucógeno de los músculos.
Uno de los factores clave de la fabricación y comercialización que fomenta el mercado de las bebidas funcionales se refiere al hecho de que en su elaboración no se utilizan conservantes ni cafeína y que están preparadas sin carbonatación. Los obstáculos del mercado pasan por equilibrar el contenido de azúcar, la función y el sabor de los productos; no obstante se espera que el potencial de expansión en los mercados emergentes contribuya a resolver estos problemas.
