Key process steps

Mash cooling & Preparation

After milling and mashing, the sugar-containing mash is cooled to the optimum fermentation temperature. Nutrients, minerals, and process additives are introduced to create suitable conditions for yeast activity. Key objectives include: Prepare fermentable sugars Establish optimum fermentation conditions Maximize yeast performance Ensure consistent feed quality  

Yeast propagation

A dedicated yeast propagation system is used to cultivate a healthy and active yeast population before introduction into the main fermentation vessels. This propagation stage supports: High cell viability Rapid fermentation start-up Reduced contamination risks Consistent batch-to-batch performance Proper yeast management plays a major role in supporting ethanol yields and stable plant operation.

Main fermentation

During fermentation, yeast converts sugars into ethanol and carbon dioxide according to the well-known biochemical reaction. Large fermentation vessels provide carefully controlled conditions including: Temperature control pH regulation Mixing and circulation Nutrient management Process monitoring The result is a fermentation broth, commonly referred to as "beer," containing ethanol, water, yeast, suspended solids, and fermentation by-products.

Fermentation temperature control

Fermentation generates substantial amounts of heat. Efficient cooling systems are essential to maintain optimum yeast activity and prevent yield losses. Carbon dioxide generation and recovery

As ethanol is produced, significant quantities of CO2 are released. Depending on plant configuration, the CO2 can be: Vented safely Purified and recovered Liquefied for commercial use Reused in industrial applications CO2 recovery can create an additional revenue stream while supporting resource recovery within the plant.

Transfer to distillation

The fermented beer is fed to the distillation section, where ethanol is separated from water and remaining impurities. Beer ethanol concentrations typically vary depending on feedstock, yeast strain, and process design.
